1. In a large pot, heat oil. Add garlic, ginger, and green chillies. Sauté for a minute.
2. Add all the chopped vegetables one by one. Cook until they are slightly softened.
3. Add water or vegetable stock to the mixture and bring to a boil. Mix well with the vegetables.
4. Add soya sauce, vinegar, chilli sauce, salt, tomato sauce, and pepper powder. Bring the mixture to a boil.
5. Let the soup simmer for about 10-15 minutes on low heat, allowing the flavours to blend.
6. Add the sorghum flour to water to prepare a slurry. Add it to the veggies and stir well. Let the soup thicken slightly.
7. Adjust the seasoning according to your taste preferences.
8. Once the soup is ready, transfer it into serving bowls. Garnish with fried noodles for an extra crunch.
