1.Heat oil in a pan and add mustard seeds. Allow them to crackle.
2.Add curry leaves and onion and stir for 1 minute. Then, add green chillies, chopped carrots, potato and beans. Cook until the vegetables soften.
3.Add peanuts and saute for 1 minute.
4.Rinse the sorghum flakes thoroughly in water, drain them, and add them to the pan with the vegetables.
5.Add salt and turmeric powder, gently mix all the ingredients and cook for 2-3 min.
6.Once everything is cooked properly, turn off the flame and transfer the poha to a plate.
7.Garnish with fried sev and a slice of lemon and serve.
Note: You can add grated coconut. Additionally, you can include vegetables like cabbage, cauliflower, beetroot etc. as per your preference.
