1.Mix sorghum flour, maida, ajwain, black cumin and 20 ml warm oil in a bowl.
2.Add water as required and knead into a semi-tight dough.
3.Portion the dough into small equally sized balls.
4.Take one ball (keep the rest covered) and roll it out into a thin chapati.
5.Fold it by half to a semi-circle and fold it again to form a triangular shape.
6.Prepare the other balls similarly.
7.Heat oil in a pan for deep frying.
8.Add nimkis in batch sizes such that they float on the oil in a single layer. Fry until golden brown.
9.Once ready, place the nimki on a tissue paper to soak excess oil.
Serve sorghum nimki as an evening snack with tea!
