1. In a mixing bowl, take all-purpose flour, sorghum flour & salt.
2. Gradually add required amount of water, knead, and prepare a dough. Wrap the dough and refrigerate for 30 minutes.
3. In a bowl, toss the apple slices with lemon juice, ensuring they are well coated to prevent browning.
4. Add sugar, cinnamon, and nutmeg to it. Mix the spices with the apple slices to coat evenly and set it aside.
5. Preheat your oven to 190°C.
6. Remove the dough from the refrigerator and divide it in half. Roll out one half on a lightly floured surface into a large circle, about 1/8-inch thick.
7. Transfer the rolled dough to the pie dish, gently pressing it into the bottom and sides. Trim any excess dough hanging over the edges.
8. Add the spiced apple filling to the pie crust, spreading it out evenly .
9. Roll out the remaining dough and carefully lay it over the apple filling.
10 Trim the excess dough and press the edges of the top and bottom crusts together to seal.
11. Brush the top of the pie with the egg wash to give it a beautiful golden-brown finish.
12. Place the pie in the preheated oven and bake for 40-45 minutes, or until the crust is golden brown and the apple filling is bubbling through the slits.
13. Allow the pie to cool before slicing. Serve it with ice cream of your choice for an extra treat.
