1.Take bajra flour, salt, wheat flour, carrom seed in a mixing bowl.
2. Add gheel in to it and mix well making sure the dough holds shape. knead well till you form a smooth and soft dough
3.Grease 1 tsp oil. cover it and keep aside for around 10 minutes.
4.Heat oil , add hing , cumin seed coriander seeds, fennel seed and saute till it turns aromatic.
5.Now add green chilli and onion, saute until onion changes colour slightly
6.On a low flame , add turmeric, red chilli powder, garam masala,amchur, sugar, besan and salt.
7.Saute on low flame till it turns aromatic. Add coriander leaf and mix well,switch off the flame and let it be cool.
8.Make small lemon sized balls from the dough and flatten it . add required amount of onion mixture into it.
9.Gather the side and bring them together on top and seal it.
10.Gently press the edges and flatten to form a small poori size
11.In medium hot oil , fry kachori. Wait till they float. then press with the spoon to puff up. turn around and fry till it turns golden brown.
12.Once done, remove from oil and serve with chutney.
