1.Rinse kodo millet with water and keep it aside for soaking.
2.Chop onions, green chillies and vegetables.
3.Heat the oil in a medium-sized pan.
4.Roast cardamom, bay leaf and cinnamon for 2 minutes on a low flame.
5.Add onion to the pan and stir fry till the onion turns golden brown.
6.Add ginger garlic paste and stir fry for 2 minutes on a low flame.
7.Add the chopped vegetables, green chilli, turmeric powder,chilli powder and salt and stir fry for another 5 minutes.
8.Add water (3 times kodo’s volume) and bring it to a rolling boil.
9.Drain the kodo millet rice and add it to the boiling water.
10.Add garam masala to the mix.
11.Cover the pan with a plate and cook on a medium flame till rice is cooked well.
Kodo millet rice pulao is ready to be served hot with raita.
Note: This recipe can be used for proso millet or foxtail millet as well.
