  • Preparation :

  • 1. In a pan, boil water and add foxtail millet flour and semolina, stirring continuously.

  • The mixture will start to thicken slightly within 3-4 minutes. Keep it aside.

  • 2. Once the mixture is cool enough to handle, grease your palms with a little ghee and

  • knead it properly.

  • 3. Take small portions of the dough and shape them into flatten balls (gainthas). Repeat

  • this process until all the mixture is used up.

  • 4. In a separate pan, add 750 ml of milk and bring it to a gentle boil. Once the milk

  • starts boiling, add sugar.

  • 5. Stir continuously until the sugar dissolves completely.

  • 6. Reduce the heat and let the milk simmer for a few minutes until it thickens slightly.

  • 7. Add black pepper powder and green cardamom powder to the milk.

  • 8. Add the gainthas to the boiling milk and cook for another 2-3 minutes on low flame.

  • 9. Serve the foxtail millet gainthas either warm or chilled, as per your preference.

  • 10. Enjoy this delicious and nutritious millet dessert as a delightful treat!

  • Note: You can also garnish the gainthas with chopped nuts like almonds, pistachios, or

  • cashews for added flavor and texture. Also u can add 1 pinch of salt in to it.
