1. In a pan, boil water and add foxtail millet flour and semolina, stirring continuously.
The mixture will start to thicken slightly within 3-4 minutes. Keep it aside.
2. Once the mixture is cool enough to handle, grease your palms with a little ghee and
knead it properly.
3. Take small portions of the dough and shape them into flatten balls (gainthas). Repeat
this process until all the mixture is used up.
4. In a separate pan, add 750 ml of milk and bring it to a gentle boil. Once the milk
starts boiling, add sugar.
5. Stir continuously until the sugar dissolves completely.
6. Reduce the heat and let the milk simmer for a few minutes until it thickens slightly.
7. Add black pepper powder and green cardamom powder to the milk.
8. Add the gainthas to the boiling milk and cook for another 2-3 minutes on low flame.
9. Serve the foxtail millet gainthas either warm or chilled, as per your preference.

Note: You can also garnish the gainthas with chopped nuts like almonds, pistachios, or
cashews for added flavor and texture. Also u can add 1 pinch of salt in to it.
