Step by Step method

  • Preparation:

  • 1.Wash foxtail millet rice and keep aside in a bowl.

  • 2.Heat ghee in a medium-sized pan on a low flame.

  • 3.Roast cashew nuts and raisin in ghee and keep aside.

  • 4.Put foxtail millet rice in the pan and roast on a low flame in the remaining ghee for 3 to 4 minutes.

  • 5.In a separate cooking vessel add 1 cup water and milk and bring to a boil.

  • 6.Add roasted foxtail millet rice to the boiling milk and cook for around 20 minutes.

  • 7.Add sugar to the mix and stir slowly for 10 to15 minutes until the rice is fully cooked.

  • 8.Mix in the cardamom powder and garnish with cashew and raisin.

  • 9.This kangu millet kheer can be enjoyed hot or cold, as per preference.

  • Note: You can add condensed milk to enhance the taste.You can also prepare kheer with kodo millet rice, proso millet rice, barnyard millet rice or little millet rice with the same process.
