Dough making:
1. In a mixing bowl, combine the Bajra flour, all-purpose flour, wheat flour, semolina, salt and
warm oil and mix all the ingredients .
2. Gradually add water and knead the mixture into a smooth and firm dough.
3. Cover the dough and let it rest for about 30 minutes.
Stuffing making
1. In another bowl, mix together boiled potatoes, roasted cumin powder, groundnuts, salt,
chopped green chilies, chopped onion, chopped coriander leaves and red chili flakes.
2.Ensure all the potatoes mashed properly and ingredients are well combined. Adjust
seasoning according to taste.
Prepare the Pani (Spiced Water):
1. In a large bowl, mix together black salt, jaljeera powder, salt, chaat masala, green chutney
and tamarind pulp.
2. Add water to the mixture and stir well until all the ingredients are thoroughly combined. Adjust
the seasoning to suit your taste preferences.
Make the Pooris:
1.After the dough has rested, divide it into small lemon-sized balls.
2. Roll out each ball into a small disc, neither too thick nor too thin.( or u can roll one big size
and cut in to small size with cutter)
3. Heat oil in a deep frying pan over medium heat.
4. Once the oil is hot, carefully slide in the rolled-out pooris, one at a time.
5. Fry until they puff up and turn golden brown on both sides.
6. Remove them from the oil and drain excess oil on paper towels.
7. Assemble the Bajra Panipoori:
8. Once all the pooris are fried and ready, make a small hole in the center of each poori.
9. Fill each poori with a spoonful of the prepared potato stuffing.
10. Arrange the stuffed poori on a serving plate.
11. Serve the Bajra Panipoori with the prepared spiced water (pani) on the side.
