  • 1.In a mixing bowl, combine bajra flour, all-purpose flour and salt. Gradually add warm water to make a smooth dough. The dough should be firm but not stiff.

  • 2.Cover the dough and let it rest for about 15 minutes.

  • 3.In another bowl, mix cabbage, carrot, bell pepper and capsicum with 1 tsp salt and set aside for 5-10 minutes..

  • 4.Squeeze the vegetables to remove any excess water.

  • 5.Season the vegetables with onion, salt, soya sauce, garlic, green chilli and black pepper powder and mix well.

  • 6.Divide the dough into small-sized balls. Roll out each ball into a thin circle using a rolling pin.

  • 7.Place a spoonful of vegetable filling in the centre of each circle. Fold the edges of the circle to form a desired momo shape, pleating the edges and sealing them shut using water.

  • 8.Repeat the process until all the dough and filling are used up.

  • 9.Steam the momos in a steamer for about 10-15 minutes until the outer layer becomes translucent and shiny.

  • 10.Once steamed, remove the momos from the steamer and serve with chutney.
