1.In a large bowl, combine the gram flour, bajra flour, asafoetida, salt, baking soda, and crushed ajwain.
2. Pour the warm oil into the dry mixture. Mix with your hands until the ingredients start to bind together.
3. Gradually add water as required and knead the mixture to form a sticky dough.
4.In a kadhai (deep frying pan), heat oil over a low-medium flame.
5. Grease your hands with a little oil. Take a portion of the dough, shape it into a roll, and place it in the gathia mold and close it.
6.Press the dough through the mold directly into the hot oil, forming gathia shapes. Fry them on a low-
medium flame for 5 to 8 minutes until they turn light yellow.
7. Remove the gathia from the oil and place them on a plate lined with paper towels to drain excess oil.
8. Serve the gathia at room temperature with a cup of hot tea.
