  • Preparation :

  • 1.In a large bowl, combine the gram flour, bajra flour, asafoetida, salt, baking soda, and crushed ajwain.

  • 2. Pour the warm oil into the dry mixture. Mix with your hands until the ingredients start to bind together.

  • 3. Gradually add water as required and knead the mixture to form a sticky dough.

  • 4.In a kadhai (deep frying pan), heat oil over a low-medium flame.

  • 5. Grease your hands with a little oil. Take a portion of the dough, shape it into a roll, and place it in the gathia mold and close it.

  • 6.Press the dough through the mold directly into the hot oil, forming gathia shapes. Fry them on a low-

  • medium flame for 5 to 8 minutes until they turn light yellow.

  • 7. Remove the gathia from the oil and place them on a plate lined with paper towels to drain excess oil.

  • 8. Serve the gathia at room temperature with a cup of hot tea.
