Step by Step method

  • Preparation:

  • Prepare the Filling:

  • 1.Heat a pan on medium heat and add grated coconut and jaggery.

  • 2.Add black pepper powder and green cardamom powder for flavor.

  • 3.Stir continuously until the jaggery melts and mixes well with the coconut.

  • 4.Cook the mixture until it thickens and starts to leave the sides of the pan.

  • 5. Remove from heat and let it cool down.

  • Prepare the Dough:

  • 1. In a mixing bowl, combine semolina (suji) and ragi flour.

  • 2.In a pan take water , Add ghee , fennel seed , sugar and boil it.

  • 3. When water starts to boil add Ragi semolina mixture in to it and mix it properly.

  • 4. Switch off the flame and keep it at room temperature for 5-7 min.

  • 5. Then knead the mixture to form a smooth dough.

  • Pitha preparation:

  • 1.Divide the dough into medium size balls. Roll out each ball into a small circle, similar

  • to the size of a poori.

  • 2.Place a spoonful of the prepared coconut-jaggery filling in the center of each circle.

  • 3. Fold the edges of the circle to cover the filling and seal it properly, giving it a semi-

  • circular shape.

  • 4. Take oil in a pan and heat it.

  • 5. add stuffed pithas on to the hot oil and fry them on low to medium heat until they turn

  • golden brown and crisp on both sides.

  • 6. Once cooked, remove the Kakara Pithas from the pan and let them cool for a few

  • minutes.

  • 7. Serve warm and enjoy the deliciousness of this traditional Odia sweet dish prepared

  • with millets !
