Prepare the Filling:
1.Heat a pan on medium heat and add grated coconut and jaggery.
2.Add black pepper powder and green cardamom powder for flavor.
3.Stir continuously until the jaggery melts and mixes well with the coconut.
4.Cook the mixture until it thickens and starts to leave the sides of the pan.
5. Remove from heat and let it cool down.
Prepare the Dough:
1. In a mixing bowl, combine semolina (suji) and ragi flour.
2.In a pan take water , Add ghee , fennel seed , sugar and boil it.
3. When water starts to boil add Ragi semolina mixture in to it and mix it properly.
4. Switch off the flame and keep it at room temperature for 5-7 min.
5. Then knead the mixture to form a smooth dough.
Pitha preparation:
1.Divide the dough into medium size balls. Roll out each ball into a small circle, similar
to the size of a poori.
2.Place a spoonful of the prepared coconut-jaggery filling in the center of each circle.
3. Fold the edges of the circle to cover the filling and seal it properly, giving it a semi-
circular shape.
4. Take oil in a pan and heat it.
5. add stuffed pithas on to the hot oil and fry them on low to medium heat until they turn
golden brown and crisp on both sides.
6. Once cooked, remove the Kakara Pithas from the pan and let them cool for a few
minutes.
7. Serve warm and enjoy the deliciousness of this traditional Odia sweet dish prepared
with millets !
