1.Soak the Prosomillet rice in water for about 30 minutes. Drain and keep aside.
2.Wash and chop all the vegetables (cauliflower, potato, beans, carrot, beetroot) and keep them aside.
3.Heat oil in a pan and fry cashews and raisins until they turn golden brown. Remove from the pan and set aside.
4.In the same pan, add sliced onions and fry until they turn golden brown.
5.Once done , remove from oil and keep in a bowl and add biriyani masala, garammasala and sugar in to it and mix properly..
6.In the same pan, heat oil again , fry chopped vegetables one by one (cauliflower,potato, beans, carrot, beetroot) and remove from oil and keep aside.
7.Once done , remove from oil and keep in a bowl and add biriyani masala, garam masala and sugar in to it and mix properly.
8.In another pan heat oil , add all whole spices and sauté for a minute until fragrant..
9.Add chopped onions, slit green chillies, and ginger-garlic paste. Sauté until the raw smell disappears..
10.Now add salt, cumin powder, coriander powder, and red chilli powder. Mix well..
11.Add green pean and all fried vegetables to the pan and sauté for a few minutes.Cook it for 4-5 min in low flame or till vegetable cooked properly .
12.Boil water in a pot, add whole spices, 1 tsp oil and salt to the boiling water..
13.Once the water starts boiling, add the Prosomillet rice to the pot..
14.Cook the Prosomillet rice on medium flame until 80% cooked. Stir occasionally to prevent sticking..
15.Once the rice is 80% cooked, drain it using a strainer and set it aside..
16.In a separate pan, add 20 ml ghee .add a layer of Prosomillet cooked rice.
17.Sprinkle onion masala mix , chopped mint leaves and coriander leaves
18.Add a layer of cooked vegetable mixture on top of it. Sprinkle some fried cashews and raisins over the vegetables..
19.Repeat the layers until all the Prosomillet and vegetables are used up. Finish with a layer of Prosomillet, mint coriander leaf and cashew raisin on top.
20.Add ghee over the top layer of Prosomillet.
21.Pour rose water evenly over the layers.
22.Cover the pot with a tight-fitting lid. Cook on low heat for about 10-12 minutes, allowing the flavors to meld together and the Prosomillet to cook through.
23.Once done, Enjoy the aromatic and flavourful Vegetable Biryani with raita or your
favorite side dish.
