1.Start by boiling water in a pot. Add a pinch of food colour and 1 teaspoon of ghee to the boiling water.
2.Once the water starts boiling, add the prosomillet rice to the pot.
3.Cook the prosomillet rice in the coloured water on medium flame until it is 85% cooked. This will take about 15-20 minutes. Stir occasionally to prevent sticking.
4.Once the rice is 85% cooked, drain it using a strainer and set it aside.
5.In a separate pan, heat 2 teaspoons of ghee over low to medium heat.
6.Add the cashew nuts, raisins, coconut slices, fry till cashew tuns brown colour and keep aside
7.Add 3 tsp ghee in pan then add bay leaves, crushed green cardamom and cloves to the pan. Sauté them until they turn golden brown and aromatic.
8.The add the cooked prosomillet rice to the pan and sprinkle sugar over the rice and mix well.
9.Cook the rice mixture for another 5-7 minutes, stirring occasionally, until the sugar is fully dissolved and the flavors are well combined.
10.Add roasted cashew, raisin and coconuts and cook for another 5 minutes in low flame.
11.Once done, remove the pan from heat.
12.Serve the Prosomillet Jarda hot as a delicious and nutritious dessert or snack !
