Step by Step method

  • Preparation :

  • 1.Start by boiling water in a pot. Add a pinch of food colour and 1 teaspoon of ghee to the boiling water.

  • 2.Once the water starts boiling, add the prosomillet rice to the pot.

  • 3.Cook the prosomillet rice in the coloured water on medium flame until it is 85% cooked. This will take about 15-20 minutes. Stir occasionally to prevent sticking.

  • 4.Once the rice is 85% cooked, drain it using a strainer and set it aside.

  • 5.In a separate pan, heat 2 teaspoons of ghee over low to medium heat.

  • 6.Add the cashew nuts, raisins, coconut slices, fry till cashew tuns brown colour and keep aside

  • 7.Add 3 tsp ghee in pan then add bay leaves, crushed green cardamom and cloves to the pan. Sauté them until they turn golden brown and aromatic.

  • 8.The add the cooked prosomillet rice to the pan and sprinkle sugar over the rice and mix well.

  • 9.Cook the rice mixture for another 5-7 minutes, stirring occasionally, until the sugar is fully dissolved and the flavors are well combined.

  • 10.Add roasted cashew, raisin and coconuts and cook for another 5 minutes in low flame.

  • 11.Once done, remove the pan from heat.

  • 12.Serve the Prosomillet Jarda hot as a delicious and nutritious dessert or snack !
