Step by Step method

  • Preparation :

  • 1.Place water on a medium heat and rinse the cowpea seeds thoroughly. Add them to the boiling water and cover it.

  • 2. Boil them on medium heat until they're about 70 to 80% cooked (you should be able to mash them slightly but still have some firmness).

  • 3. Now, add the rice to the boiling cowpeas.

  • 4. Stir and let them cook together for about 15–20 minutes or until the rice is softened and fully cooked. Keep the pot covered .

  • 5. In a separate bowl, mix the ragi flour with enough water to make a thin, watery mixture.

  • 6. Add the watery ragi flour mixture and salt to the boiling rice and cowpea mixture and stir cotinuesly .

  • 7. Let the mixture cook on low to medium heat for another 10-12 minutes, stirring occasionally to ensure it does not stick to the bottom of the pot.

  • 8. Once the dish is cooked and thickened, it’s ready to serve!

  • 9. Serve this Ragi/ Mandia Simba warm with curry or any green leaf stir fry.
