1.Place water on a medium heat and rinse the cowpea seeds thoroughly. Add them to the boiling water and cover it.
2. Boil them on medium heat until they're about 70 to 80% cooked (you should be able to mash them slightly but still have some firmness).
3. Now, add the rice to the boiling cowpeas.
4. Stir and let them cook together for about 15–20 minutes or until the rice is softened and fully cooked. Keep the pot covered .
5. In a separate bowl, mix the ragi flour with enough water to make a thin, watery mixture.
6. Add the watery ragi flour mixture and salt to the boiling rice and cowpea mixture and stir cotinuesly .
7. Let the mixture cook on low to medium heat for another 10-12 minutes, stirring occasionally to ensure it does not stick to the bottom of the pot.
8. Once the dish is cooked and thickened, it’s ready to serve!
9. Serve this Ragi/ Mandia Simba warm with curry or any green leaf stir fry.
