  • Preparation :

  • 1. In a mixing bowl, take ragi flour and salt. Gradually pour water and mix all ingredients until you get a soft, smooth dough.

  • 2. Wash siali leaves thoroughly , take a portion of the dough, and shape it into a flat, round patty.

  • 3. Place the patty of dough on one side of the Siali leaf.

  • 4. Fold the other side of the leaf over the dough so that the dough is completely enclosed.

  • 5. Set up a traditional fire using firewood to create a nice, steady heat. (Or you can also use a heat tawa to cook this.).

  • 6. Place the wrapped Siali leaf parcels on the embers, allowing them to cook slowly for 8-10 min. Flip them occasionally to ensure an even cook.

  • 7. Once the Mandia Pitha (Mande) is cooked, remove it from the embers and carefully unwrap the Siali leaves.

  • 8. Serve these hot, freshly cooked pithas with a side of any chutney or enjoy them as a simple, hearty, and traditional tribal meal.
