1. In a mixing bowl, take ragi flour and salt. Gradually pour water and mix all ingredients until you get a soft, smooth dough.
2. Wash siali leaves thoroughly , take a portion of the dough, and shape it into a flat, round patty.
3. Place the patty of dough on one side of the Siali leaf.
4. Fold the other side of the leaf over the dough so that the dough is completely enclosed.
5. Set up a traditional fire using firewood to create a nice, steady heat. (Or you can also use a heat tawa to cook this.).
6. Place the wrapped Siali leaf parcels on the embers, allowing them to cook slowly for 8-10 min. Flip them occasionally to ensure an even cook.
7. Once the Mandia Pitha (Mande) is cooked, remove it from the embers and carefully unwrap the Siali leaves.
8. Serve these hot, freshly cooked pithas with a side of any chutney or enjoy them as a simple, hearty, and traditional tribal meal.
