This recipe involves three steps
Preparing the Dough:
1.Add ragi flour, maida, kala jeera, salt and 20 ml warm oil to a mixing bowl.
2.Add required amount of water and knead to make a doughw
3.Cover the dough and set aside for around 30 minutes.
Preparing the Stuffing:
1.Heat oil in a pan. Add curry leaves, pancha phutana and ground nuts and stir well.
2.Add ginger, garlic, green chilli, onion, potato, carrot,coconut, red chili powder, aamchur, turmeric and salt.
3.Saute till all the vegetables are cooked. Then add garam masala and jeera and stir well.
4.Set the stuffing aside.
Preparing the Samosa:
1.Make small dough balls, roll them out into thin circles, and cut into semi-circles.
2.Take each semi-circle onto your palm, place the desired amount of stuffing on it and fold into a triangular shape.Seal the stuffing in by gently pressing the dough edges together.
3.Deep fry all the samosas. Flip them until they are golden brown.
4.Serve hot samosas with green chutney, ghugni (peas curry) or sweet and tangy tamarind chutney.
