Little Millet Salad

Little Millet Salad combines the traditional flavors of a green salad with the healthy ancient grain. It’s delicious on its own as a complete meal or served as a side with other Mediterranean-inspired dishes. This recipe is vegan and gluten-free.

Ingredients

  1. Saame rice – 1/2 cup (cooked),
  2. Sweet corn – 1/2 cup,
  3. Sprouted green gram – 1/2 cup,
  4. Carrot – 1 grated,
  5. Raw mango – grated or lemon juice of 1 lime,
  6. Pomegranate – 1,
  7. Coconut – grated (little),
  8. Salt – to taste,
  9. Sugar – 1/2 tsp,
  10. Coriander leaves – chopped 2 springs.
  11. Seasoning: Coconut oil, mustard, hing, curry leaves and chopped green chillies.

Directions

  1. Take 1/2 cup of saame rice and dry roast.
  2. Cook in half cup of water in a cooker (for 1 whistle). keep it a side to cool.
  3. For salad: Mix everything in a bowl , make the seasoning and add it.
  4. You can either serve it as a main course or as a salad.
