Foxtail Millet Vada

The crispy, fried, savoury doughnut-like rounds of millet vada are served with piping hot sambhar curry, chilled coconut chutney and garlic

Ingredients

  1. Foxtailmillet - 500 gm
  2. Blackgram - 250 gm
  3. Onion - 150 gm
  4. Green chilli - 50 gm
  5. Curry leaves - 1 handful
  6. Fenugreek seeds - 5 gm
  7. Cumin - 10 gm
  8. Suji - 50 gm
  9. Salt - as per taste
  10. Oil for frying - 500 ml
  11. Coriander leaves - 1 handful

Directions

  1. Wash and soak foxtail millet rice in water for 4 hours in a bowl.
  2. Mix fenugreek seeds with blackgram and soak it for 4 hours in a separate bowl.
  3. Add little water to foxtail millet rice and grind it till it turns into paste and keep it a bowl.
  4. Add little water to blackgram-fenugreek seeds mix and grind it till it becomes paste.
  5. Mix both blackgram batter and foxtail millet rice batter.
  6. Ferment the mix for 4 hours. In winter, ferment it overnight.
  7. Mix chopped onion, Suji, green chilli, coriander leafs, cumin seeds, curry leaves, salt to the fermented batter and mix it well.
  8. Heat oil in a pan.
  9. Make small round balls and flatten it with hand.
  10. Deep fry it in hot oil till they turn brown in colour.
  11. Serve hot with Sambar/chutney.
  12. (You can also prepare vada with kodo millet rice, Proso millet rice, Banyard millet rice and little millet rice with this process.)
