Kodo Millet Pulao

Millet Vegetable Pulao is a delicious one pot meal, which is easy to prepare and also nutritious. I have used Kodo millet for making this pulao. You can substitute it with barnyard millet or little millet.

Ingredients

  1. Kodo millet - 1 cup,
  2. Water - 1 & 1/2 cups,
  3. Chopped carrot, beans, green peas - 1 cup, Onion – 1,
  4. Ginger garlic paste - 1 tsp,
  5. Green chilli – 2,
  6. Mint leaves – 12,
  7. Salt - as needed;
  8. To temper: Ghee/ oil - 3 tsp,
  9. Cinnamon - 1 inch piece,
  10. Fennel seeds - 1 tsp and Bay leaf - 1.

Directions

  1. Heat a small pressure cooker and sauté with oil/ ghee and add cinnamon, fennel and bay leaf.
  2. Stir and add onion and ginger garlic paste.
  3. Add the chopped veggies, mint leaves and salt.
  4. Add washed, drained millet to it and mix well and cook.
  5. Add water, salt and bring to boil, mix well and cook for a whistle in medium or low flame.
  6. Serve hot garnish with coriander leaves.
